For me, the answer is simple: the moment it’s pressed—fresh, unfiltered, and alive. A sake that only brewers typically get to taste.

This winter, I had the rare chance to take part in a 4-day hands-on sake brewing program in Fukui’s snow-covered countryside.


👨‍🔬 A Brewer for Four Days – Plus a Lucky Shibori Surprise

Although I work as a real kurabito(sake brewer) in Kyoto, I joined this immersive brewing program in Fukui Prefecture to broaden my perspective. The program is hosted at a beautifully renovated 90-year-old guesthouse that’s warm, welcoming, and just a short walk from the brewery.

Each day focused on a different stage of sake production:

  • 🏁 Day 1: Soe-jikomi (initial yeast starter)
  • 🍚 Day 2: Koji-making (cultivating koji mold)
  • 🌀 Day 3: Naka-jikomi (intermediate fermentation)
  • 🔚 Day 4: Tome-jikomi (final mash)

BONUS! I was lucky to witness the rare shibori moment (pressing), when the master brewer decided the sake was ready. Not part of the official plan – just pure timing.

Program Length: 4 days (1- or 2-day options also available)
Time: 9:00 AM – ~3:00 PM daily
